Friday, January 23rd: The last few days have been pretty uneventful on the vegan front. (But please, keep reading! lol) On Friday morning, I started my morning off with oatmeal after my morning workout. For lunch I had leftover fajitas from earlier in the week and in the evening Divertimento Flute Quartet met for a final rehearsal before our Saturday night gig. We like to start rehearsal with a light dinner of healthy snacks and a little bit of wine. We had some delicious potatoes that Kana made with guac and chips, veggies and hummus, fruit, cookies and other yummy snacks.
Saturday, January 24th: Saturday was a music-filled crazy day! I started the day with oatmeal, which I ate in my car while driving to Solo & Ensemble Contest. Afterwards I worked from home and had leftover black bean casserole for lunch. Dinner really wasn’t an option on Saturday since our call time for out gig was 4:15pm. On the way, I had healthy snacks before and after the gig. It turned out to be a really great evening of killer flute playing, absolutely beautiful art and wonderful company!
Sunday, January 25th: Needless to say, I was absolutely starving by the time Joe and I made it to Northstar Cafe on Sunday morning. My original plan was to have their hot cereal, the third and final vegan option on the menu. I knew I’d be starving about an hour later, so I decided to go big with the vegan breakfast burrito. Per tradition, we followed breakfast with our weekly shopping trip to Trader Joe’s. Special thanks to Erin for her cookie suggestion. My best purchase of the week was the Soft-Baked Snickerdoodles featured below. They are absolutely heavenly and VEGAN! Joe and I ended the evening with more leftovers, which were pretty bleh…
Monday, January 26th: Monday couldn’t have gotten here soon enough, since the weekend consisted of leftovers and no exciting meals outs. For dinner, I made Indonesian Noodles from Robertson’s slow cooker cookbook. I thought they were borderline too spicy, but Joe was completely smitten. I’m a wimp, so I might need to pull back on the heat the next time I make this dish. Stay tuned for vegan Sloppy Joe’s, Two-Lentil Soup and Potpie later this week! 😉
